Mexican Cornbread Muffins

Best Mexican cornbread I have ever tasted! I have had this recipe for 30 years. If you don’t have buttermilk on hand, just use all milk.

3 eggs

3/4 c. buttermilk

3/4 c. milk

1 T. sugar

1 t. salt

1/2 t. pepper

2 c. self-rising cornmeal

1 c. oil

12-oz. can sweet corn & diced peppers, drained

2 jalapeño peppers, chopped

3/4 c. onion, chopped

1/2 c. shredded Cheddar cheese

Beat eggs in a large bowl. Add remaining ingredients; mix well. Spoon batter into greased muffin cups, filling 2/3 full. Bake at 400 degrees for 20 to 30 minutes. Makes 2 dozen.
